Ker-POW!

Car Bomb Cupcakes (via Smitten Kitchen)For your own safety, I am showing you only one of the Car Bomb cupcakes I baked for our Superbowl party this weekend. I could tell as soon as I saw the recipe at Smitten Kitchen that it was going to rock. And rock it did. Chocolate cupcakes made with Guinness? Ganache filling spiked with whiskey? Yes, please! And easy-peasy frosting to boot? You must be kidding!

 

These cupcakes, while somewhat ingredient-y, are easy and excellent. The sour cream and beer that goes into the batter results in a sinfully rich and moist cake. I was low on bittersweet chocolate, but that worked out fine, because I made half with the ganache filling and half without (for the kids and responsible adults at the party). The only other modification I made was to chuck in a bit of sour cream to the frosting. It made for frosting that was on the soft side, but the sour cream cut the cloying sweetness of the pure butter-sugar combo called for in the recipe.

chocolate cake with guiness = the best.

and then when summer rolls around, it's time for chocolate ice cream with guiness (or a good porter, also tasty).
